SUNPI RECIPE Salted Chocolate Peanut Butter Coconut PLUMPIES
Wow! When I posted these cookies on my Instagram Stories, I got SO MANY DMs asking me for the recipe for these coconut flour cookies, so I thought I would share the recipe here on my BLOG so it’s easily accessible and you can always have it!
I honestly don’t use exact measurements and this recipe is a combo of a few different recipes I found from googling “coconut flour cookie recipes.” I am eating super clean right now but tbh I have a sweet tooth and need treats on a regular basis, it just helps me eat well overall go have a little treat... I am staying away from carbs and dairy, and while this recipe does have sugar I am using coconut sugar because I like the taste and also coconut sugar def has a way lower glycemic index than regular white sugar or brown sugar.
Also, some of the ingredients can totally be swapped to make these cookies Vegan or more Keto friendly! Like you can def make these with almond butter (I just used peanut butter because I had a nice sugar free unused unsalted jar whereas the almond butter I have in my cabinet has honey and sugar, so I’m not really eating it right now.) But next time I think I will def try with almond butter!
You can def use 2 eggs instead of just one. You can also totally use egg substitue like flax seeds to make this vegan friendly, although I personally have never tried to do so: but totally an option an idea if veganism is your jam!
I smash my own chocolate instead of using chocolate chips, mostly because I didn’t have the allergen free eat food choc chips that I love but I did have this Alter Eco deep dark salted chocolate bar and thought it would taste so yummy with the rest of the ingredients - and it did!).
This recipe is low carb and has lots of protein and honestly I ate some for breakfast today 💁🏼♀️✨ enjoy! And if you make them please let me know how they came out!
EDIT: I now make these exclusively with Almond Butter swapped out for the Peanut Butter. I personally prefer the taste more, and I am more inclined to eat almonds over peanuts for ALL the reasons and benefits. I’ll have to make another blog post on NUTS and their various benefits! So, stay tuned for that.
SUNPI Salted Choc PB Coconut PLUMPIES
INGREDIENTS
1/2 cup coconut flour
2 tbsp coconut oil
1/2 cup coconut sugar
1 egg
2 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
Sprinkle sea salt
1/2 cup coconut flour
1/4 bar alter eco deep dark salted chocolate
DIRECTIONS
Preheat oven 350
Line cookie sheet with aluminum foil
Peanut butter, coconut oil, and coconut sugar in glass mixing bowl - I put a burner on low heat and put the bowl on the burner for a minute just to get the pb and coconut oil a little melty for mixing - mix until smoothish
Add egg and vanilla and mix
Add baking soda, cinnamon and salt
Add coconut flour (mix this in a little bit at a time, don’t dump it all in at once but mix into wet ingredients like a 1/3 at a time)
Should start to all stick together into a nice ball of gooey dough
Break up chocolate, kinda like fold it in and make sure is evenly distributed, the dough is kind of thick so you might have to like stick it in places to get it to stay
Take dough and roll little small like 1 inch balls with your hands and make sure the chocolate is folded into the ball nicely
Place on cookie sheet
Place cookie sheet in oven
Bake 6-7 minutes until the feel and look a little bit golden and more dry-ish looking (do not over bake!)
Take out of oven and leave on cookie sheet 2-3 minutes
Remove from cookie sheet and put on plate, when cook enough put in your mouth and enjoy
These cookies are almost like protein balls. They are supposed to be round and plumpie. They are moist and delicious and taste great warm with the gooey chocolate but also are super yummy stored in the fridge or in Tupperware on your counter overnight. Makes about 12-14 cookies; you can double or triple the recipe for more. They are a healthier, less sugar, gluten free, dairy alternative to regular Peanut Butter Chocolate cookies. Also, you can eat them for breakfast. I definitely have. Yum!
